Henry Moon (Jack Nicholson) is a notorious outlaw on the run for committing numerous crimes, including robbery and murder. He tries to escape to Mexico, but his horse collapses, and he is captured by a posse led by Sheriff Kyle (Christopher Lloyd) and Judge Roy Bean (John Belushi).

The citizens of Longhorn, the small town where he is captured, are eager to see Moon hanged for his crimes. However, a law from the post-Civil War era allows any single or widowed woman to marry him, and he'll be spared. Moon tries to find a willing bride, but no one is interested in marrying an outlaw.

Just when his time is running out, a woman named Julia Tate (Mary Steenburgen) comes forward with an offer. She proposes to marry Moon in exchange for his help in turning her barren farm into a profitable mine. Moon accepts the proposal, and they get married. Despite their initial hostility, they start to develop feelings for each other.

As Moon works on the mine, he becomes popular among the townsfolk, who start to see him in a new light. However, Moon's old outlaw partners show up in town, and they try to convince him to return to his old ways. Moon is torn between his loyalty to Julia and his old life as an outlaw.

Things come to a head when the mine starts to collapse, and Moon risks his life to save Julia and the other miners. In the end, Moon decides to stay in Longhorn with Julia and lead an honest life. The film ends with the couple riding off into the sunset together.
